The various types of bread we offer are all made with live sourdough, unsalted (as per tradition), and with Tuscan soft wheat flour from Panificio Celata in Pitigliano (Pane&Panettieri d’Italia by Gambero Rosso). In Tuscany, the sacredness of bread and its reuse even when stale is reflected in a variety of ancient recipes still widely used today, such as panzanella, acquacotta, ribollita, fettunta, and many other dishes you’ll often find on our daily menu. NATURALIZED WATER in a one-liter bottle € 2.00 ...sparkling € 2.50
Our water originates from the many springs within the volcanic cone of Monte Amiata. It is filtered and purified by our system to make it “alive,” fresh, and above all local; not bottled for months and transported by trucks across the country.
While waiting, you can taste the most representative oils of the territory, offered in small 100 ml bottles. Characteristics and descriptions are listed at the end of the menu.

A “poor” dish from Tuscan tradition based on stale bread mixed with onions, tomatoes, cucumbers, peppers, and celery; “drenched” with Tuscan EVO oil and agresto. (All. 10 and 12)
Fava Beans Soranese Style ♨️ € 10.00
A local dish with ancient origins made by cooking fava beans (seasonal or frozen) with Tuscan rigatino @, onion, and tarragon.
Sweet and Sour Caponata with Ancient Fruits ♨️🌱€ 10.00
Grilled eggplants and peppers combined with tomato sauce and various ancient fruits (Az. S. Benedetto) from Sorano, previously preserved in syrup.
Soranese Bean and Chickpea Salad 🌱 € 8.00
Depending on availability, we use for this salad: Dolici or Cannellini, Toscanello or Ciavattone, Secondino, Borlotto, or Purgatorio beans combined with black chickpeas or sultan chickpeas, with spring onions, olives, EVO oil, and Tuscan agresto (PAT). These and other legumes we use for soups (such as Roveja) are produced in the Municipality of Sorano by the organic farm San Benedetto. You can also purchase them here at the Cantina L’Ottava Rima.

Mixed pork sausage with boiled potatoes (a typical product from Sorano), grilled on Tuscan bread@. The producers are both located in the Municipality of Sorano. (Allergens 10)

A Mediterranean recipe “Maremmanized” by us: vine leaves stuffed with native, organic rice (from Tenuta San Carlo in Grosseto), Maremmana Beef ragù @, and aromatic herbs; cooked in local red wine. (Allergens 10 and 14)

Mixed cheese cubes, melted in terracotta pots with EVO olive oil and white wine. We can add aromatic herbs, slices of local pear, or shavings of local truffle at your choice. (Allergens 4, 10, and 14)

Maremmana Beef Tartare 🐌 € 16.00
This native breed becomes a Slow Food Presidium only if raised organically and on free-range pasture, with a homeopathic diet and no antibiotics or supplements. We believe tartare is the best way to highlight the qualities of this meat; we serve it on a bed of mixed greens, oil, salt, pepper, and our horseradish and local pear sauce. On request, we can prepare a version with mustard and quail egg (€ 20.00).
Limousine Carpaccio 🐌 € 16.00
The Limousine cows of Andrea Valurta are part of a free-range herd practicing rational grazing, a method that promotes animal welfare, optimizes forage use, and enhances soil organic matter. This grazing approach is part of a research project in collaboration with CREA, which includes analyzing the nutraceutical properties of the meat. From this farm, we source carpaccio (served with mixed greens, oil, salt, and pepper) and other cuts found in our daily specials.

We venture outside the province but stay in Tuscany with this ancient regional recipe made from pork shoulder marinated in coarse salt and cooked in white wine with aromatic herbs. (Allergens 14)

Poderi Borselli, Montegiovi (GR)
Three excellent varieties of organic EVO oils, produced on Mount Amiata and made using entirely renewable energy. Additionally, Davide’s company is part of FIOI, the Italian Federation of Independent Olive Growers.

Oro is part of the "Il Profumato" selection, with a medium fruity taste, and is a DOP made 100% from Olivastra Seggianese olives.
ARGENTO € 6,00
Like the color of olive leaves during flowering, shimmering like silver. Argento belongs to the "Il Saporito" selection with an intense fruity taste. Made from 50% Maurino, 15% Leccino, another 15% Frantoio, and 20% Olivastra Seggianese olives.
ÈSTRABONO € 6,00
Èstrabono is a delicate extra virgin olive oil made from 40% Maurino, 30% Leccino, and 30% Frantoio olives.

Rocchette di Fazio (GR)
EXTRA VIRGIN OLIVE OIL € 6,00
A bold, fruity, and slightly spicy EVO oil. A blend of 30% Leccino, 30% Frantoio, 30% Moraiolo, and 10% Olivastra olives. Harvested manually with mechanical electric tools and milled within 24 hours. The fruits are kept in a refrigerated chamber before processing to maintain low acidity levels. The mill operates entirely cold, ensuring the paste never exceeds 28°C. The system uses nitrogen to prevent oxidation, and the oil is directly filtered, preserving its freshness for over a year. Organic farming methods are used, and the olive groves span Rocchette di Fazio and Sovana. Some olive trees in Rocchette were part of Count Piccolomini's estate, with a reputation for exceptional quality due to elevation and exposure. The Sovana groves benefit from volcanic tuff soil, enriching the oil's flavor and nutrients.

The beers we have selected come from small local breweries. They are unfiltered, unpasteurized, and mostly made with locally sourced ingredients.

LA LUNAIA - Chestnut Porter € 7,50
A dark beer fermented at lower temperatures to achieve a drier and cleaner taste. Brewed with nine different malts, it boasts complex and robust flavors, ranging from Arabica coffee, cocoa, dried fruit, and caramel, finishing with a mix of peated malt and smoked chestnuts.
LA CIOLA - Smoked Blanche € 7,50
A pale blonde beer inspired by blanche styles. Distinguished by the clever use of spices and smoked chestnuts. Aromas of coriander and citrus, with a characteristic smoky profile reminiscent of speck. Light, delightful, and distinctly Tuscan with a unique smoked touch.
LA CAPERCIA - Wet Hop IPA € 7,50
The first beer on the market using hops grown on Mount Amiata. A Fresh Hop IPA born from a collaboration with the "IN BOCCA AL LUPPOLO" Brewery. Made with freshly harvested hops from Arcidosso (GR) in late summer 2021. The beer retains the fresh, green aromas of freshly cut grass and hops, delivering a well-balanced, pleasantly bitter taste. Aromas of exotic fruits and mango highlight the sensory connection between raw ingredients and the final product.
LA CIACCIAIA - American IPA € 7,50
A blonde beer with fine, persistent foam, brewed with dried hops. Features inviting citrus and resinous notes on the nose, balanced with malts and oats, finishing with a delicate bitterness.
LA PIANESE - American Pilsner € 7,00
German-inspired golden beer with subtle white foam. Offers floral and cereal notes, refreshing and smooth, with gentle malty hints and a soft bitterness.
From Ugo Contini Bonacossi's microbrewery, agricultural beer from Roccalbegna in two versions (plus a SEASON), available in 500 ml bottles:
BRÒC - Belgian Ale € 11,00
Tuscan agricultural beer, top-fermented. Aromas of white-fleshed fruit and bread crust, with caramel and licorice notes intertwined with mature fruit and yeast. On the palate, it is bold, velvety, and moderately thick.
BeeBRÓC - Belgian Honey Ale € 11,50
...and the version made with local wildflower honey. Offers aromas of white-fleshed fruit and bread crust, with caramel and honey notes intertwined with mature fruit and yeast. A smooth, rich palate.
