Tuscan bread🌀 (wheat flour) made with natural yeast.
The various types of bread you will find here are all produced with live mother yeast and Tuscan soft wheat flour certified by the Celata Bakery in Pitigliano. Tuscan bread is naturally salt-free. The dough is left to rise by using a piece of the dough itself, from which "mother yeast" is in fact preserved and refreshed every day. In Tuscany the sacredness of bread, the importance of not throwing it away and using it, is testified by a series of ancient recipes still widespread, such as panzanella, acquacotta, ribollita, pappa al pomodoro, fettunta, the black cabbage soup and many others that you can often find in our daily menu. Our water originates from the numerous springs present in the volcanic cone of Monte Amiata. It is treated according to the D.L. nr. 181 of 23/06/2003 of the Ministry of Public Health which allows, thanks to the use of modern EEC certified purification plants, to highlight its freshness and quality from the source to the table. It is therefore a "local" water, alive, not bottled for months and not transported far and wide. …Make your wait more tasty…

(This native breed becomes a Slow Food Presidio only if it comes from organic and semi-wild breeding. We offer it in two simple versions:
"CARPACCIO"
Original processing of veal (usually topside or under topside) breaded in aromatic herbs and put in salt. The result is a lean and fragrant product with aromas of stain. It is served with salad, a little olive oil, pepper and lemon.
"TARTARE"
Served with salad, oil, pepper and lemon. The dish is accompanied by a pear-flavored horseradish pear sauce.
Polpa di MAIALE SOTT'OLIO 🌀♨️€ 12,00
It is an exclusively handmade production, typical of the upper Maremma and of the Albegna Hills, born from the need to preserve meat for a long time. After salting, it is cooked with oil, garlic, rosemary and sage and placed in glass jars, where it can also be stored for a year.
