According to tradition, the must ferments for five years with the mother yeast in sealed wooden caratelli. Only the finest barrels are selected for an additional five years of aging before bottling. Vinsanto is the pinnacle of oral tradition, handed down from generation to generation over centuries. Housed in its precious crystal bottle, accompanied by a wooden case, it offers an exceptionally elegant way to serve this outstanding wine.
Aging in caratelli: 5 years + 5 years for the best barrels.
Dark amber in color, almost mahogany. On the nose, it is rich with notes of candied fruit, orange and citrus peel, orange blossom honey, and yellow flowers, followed by hints of chestnut, humus, earthy tones, and a delicate smokiness that adds depth to the bouquet.
As it warms in the glass, aromas of dates and spicy nuances emerge. On the palate, it is extremely sweet, yet graceful and clear, with vibrant orange notes running throughout. Freshness and salinity balance the richness. The persistence is truly impressive.
