Borlotti beans are large and dark-colored (reddish-brown), with an intense flavor. They are commonly used in soups, stews, and purees. Beans are rich in carbohydrates, protein, fiber, minerals, and B vitamins.
For these reasons, they support healthy digestion, help lower cholesterol, and are recommended for people with diabetes, as they help reduce sugar absorption.
It is believed that Columbus encountered the bean during his second voyage to the island of Cuba. Today, there are over 500 bean varieties available on the market. From a nutritional perspective, beans are a great source of plant-based protein and are free from the fats typically associated with animal proteins, making them suitable for low-cholesterol diets.
They have no contraindications for vegetarian, vegan, or religious diets. However, since they are not edible when raw, they should be avoided in raw food diets. Beans are a valuable source of plant protein, though not a complete substitute for animal-based proteins on their own. Their nutritional value increases significantly when combined with grains.
To prepare: soak the dried beans in warm water the day before cooking. The next day, drain them and place in a pot with cold water. Bring to a boil, then lower the heat, add salt, and simmer for about one hour.
